Description
We call these “bacon medallions” as they are cured/smoked just like traditional belly bacon, except each slice is more round — perfect for breakfast sandwiches! The jowl is the cheek of the hog. All of our pork is from our own Berkshire hogs (aka Kurobuta pork / black pork). They are raised on pasture with additional fruits and vegetables, lending to flavorful and well marbled cuts.
